The Talha Tradition
The José de Sousa Mayor 2018 Red Wine embodies the timeless talha technique at José de Sousa winery, mirroring practices from 2000 years ago to deliver an Alentejo red of profound depth and spice. Grapes are hand-harvested, lightly foot-trodden and destemmed by hand on the traditional “ripanço table”. Part of the must ferments in talhas (around 1600 litres each) with skins and 30% stems at 28°C, cooled by spraying water four times daily, while the rest ferments in lagares – infusing spicy layers and a captivating third dimension. After four weeks of skin contact, the wine matures for 9 months in new French oak casks, then bottled unfiltered and unstabilised, allowing natural sediment to form over time.
